CREAM CHEESE POUND CAKE
As you can tell from the ingredient list, this is not a cake you would want to serve all the time. Make
this cake for a special occasion. You will absolutely love it.
1 cup softened margarine
½ cup softened butter
1 - 8 oz pkg of cream cheese, softened
3 cups sugar
Dash of salt
2 teaspoons vanilla
6 large eggs
3 cups cake flour
(DO NOT PREHEAT OVEN) Combine margarine, butter, cream cheese, and sugar. Beat well. Add
salt and vanilla. Beat well. Add eggs one at a time, beating well after each addition. Add cake flour a
little at a time, beating well. Pour batter into a greased floured 10 inch tube or bundt cake pan. Place
pan in COLD oven. Set oven to 275 degrees and bake for 1 ½ hours or until wooden pick inserted in
the middle comes out clean. Let cool in pan. Turn out on platter and dust with powdered sugar.

Just wanted to say that this pound cake was the hit of the holiday! It is melt-in-your-mouth good! My family and friends just raved about it. The funny thing is that I don’t think I’ve ever made a pound cake before. For anyone who wants a good baking experience - make this pound cake! Thanks so much, Betty. This just might be a new Christmas tradition.

I asked Debra permission to post her response to my website. She said, “I certainly don’t mind! That cake was wonderful! My son-in-law the chef was too stuffed after Christmas dinner to eat any, so he took some home (both my daughters and their husbands flatter me by leaving after each meal with a to-go crate – doesn’t leave us many leftovers, but it does make me happy) anyway . . . he called back around 10pm to say he passed by the cake and decided to “take a bite” and that was it – he ate the whole slice. Said he had to call and tell me it was the best he’d ever tasted!!!!! All true! You can put it in stone!”

Okay, now I’ve got to bake it. Haven’t baked in a while. But let me tell you I love me some pound cake and especially when it’s not dry.
