Sour Cream Peach Muffins
1 1/2 cups brown sugar
2/3 cup oil
1 egg
1 cup sour cream
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking soda
2 1/2 cups all-purpose flour
1 1/2 cups peaches, fresh or canned, drained and chopped
1/2 cup chopped nuts
Combine brown sugar and oil and egg in a mixing bowl.
In another bowl, mix sour cream, salt, vanilla extract and baking soda. Add this to the mixing bowl and slowly blend in flour. Do not over-mix. Fold in peaches and nuts. Pour into muffin cups and sprinkle with sugar and/or cinnamon. Put a bit of butter on top of each. Sprinkle nuts on top for more nuttier flavor. Bake at 325 degrees F for 30 minutes.
Makes 15-20 muffins.

I’m curious—what is the purpose of including the sour cream. Does it bring out the peach flavor? Could you make the recipe without it or replace it with something else–like Peach Schnapps?!

Oh my God.. I wish my husband loved Peaches as much as I do.. I’d love to make these. I’m going to have to save this recipe for company and he’s just going to have to deal with it. !!

Like, yogurt, sour cream tenderizes and softens baked goods. You could leave out the sour cream. However be careful adding liquids like Peach Schnapps. You don’t want the batter to be too liquid. Adding just a tablespoon or two of Peach Schnapps would enhance the peach flavor.

Vicki, You will not be disappointed in these muffins! Make a batch and freeze them individually for your personal treats. I’m grateful my hubby loves peaches as much as I do.

I have tried so many of your great recipes. Each of them has been better than the last. I thought you couldn’t possibly outdo yourself. And then I find these. I love peaches! I’m already imagining a nice Sunday breakfast with Sour Cream Peach Muffins made with fresh Arkansas peaches and some good Kona coffee. My mouth is watering already!
