Strawberry Jelly Cookies
Great for Valentine’s Day parties.
2 1/2 cup Flour
1 teaspoon Baking powder
1/2 teaspoon Salt
1 cup Shortening
1 cup Sugar
1 egg, beaten well
2 tablespoons Pet Milk
1 1/2 teaspoon Vanilla
Confectioner’s Sugar
Sift together flour, baking powder and salt, set aside. Cream shortening and sugar together, mixing well. Stir in egg, milk and vanilla. Roll dough in plastic wrap and chill overnight.
Rollout dough and cut with a heart cookie cutter. Every cookie needs a top and bottom. Bake at 350 degrees for 8-10 minutes. When cool assemble the cookies. Put a teaspoon of jelly on the bottom of a cookie, and then cover with another cookie. Shower with Confectioner’s Sugar.

Now you know I had to stop by here and see what kind of delicious treats you were cooking up for Valentine’s Day. Strawberry Jelly Cookies—yum yum! Got a queston: why the pet milk versus regular milk or even soy milk for that matter?

Pet milk is a richer milk, in my opinion. I found the following on the Pet milk website. “Pet Evaporated Milk is a homogenized concentrate made from fresh, whole cow’s milk with a little more than half of the natural water removed. It is fortified with Vitamin D.”
I love Pet milk in baking, custards, pies, etc. You could use regular milk if you would like. I’m not knowledgeable about baking with soy milk. You might want to test it first.

I wondered why I had the sudden urge to buy strawberry jelly today! I must have been picking up Bev’s and Eileen’s vibes about these cookies. Now I have an excuse to have the grandkids come over for the day - we’ll bake cookies!
